SBK Bike Races

I went to a bike event on Memorial Day at the Miller Motor Sports Park.
Before heading out, we all put on tatts...just to fit in:)

Yellowstone/Jackson

 I generally go to the beach over Memorial Weekend.
But this year, I one-upped myself and went to freezing, cold Jelly Stone. 
It was actually a lot of fun.
 


 There were Evergreens...
 ...and Tatonkas
...and Geysers. oh my!

 
 The blue skies even peeked around the clouds for a minute.

 Ironically, I ran into my old neighbors from Virginia.  
Their family lived right across the street from me in Old Town Alexandria.
They live in Logan now, all the more reason to visit cache valley.

We drove all around the park and then headed down to Jackson Hole for dinner.
I have not been to JH since I worked there the summer of '03.  
It was fun to reminisce...but I wish the weather had been warm/sunny.

Jessica & Tabbi's Workshop

 Back in January I started working on a project with my friend Jessica.
She was on a search for some dining room chairs...and I needed chairs as well.

These were the original chairs.  
Mine=turquoise. Jessica's=dark wood.
 Phase 1: Buying Paint and Fabric for our envisioned masterpiece.
Phase 2: Sanding the paint off.

Phase 3: Priming 

 Phase 4: Painting ~17 layers.

 Phase 5: Adding several layers of polyurethane. 
Phase 6: Removing the old fabric...which was ridiculous.
Phase 7: Staple gun on new fabric

 Phase 8: Invite friends over for Dinner!
 My finished chairs.  I LOOOVE them.  What do you think?

I started this project in January and just barely finished.

Havasupai

 For years I've been wanting to hike down to Havasupai Falls.
Last week, I went for it.
We hike 30 miles in 3 days with packs on our backs.

A big thanks to Brad for letting me borrow his high tech, light camping equipment!
 Beaver Falls was quite a trek from Mooney Falls. 
It was a beautiful hike, but Beaver Falls wasn't the coolest.

However, I didn't jump. For lots of reasons that seem so silly now.

 Our Lasagna meal was amazing.  
So was the Chicken Fettuccine.  Maybe we were starving but they hit the spot.
 Also good--Geoff's stroganoff.
 If you want to get down to Mooney Falls to hike down to beaver, you have to lower yourself down this 200 foot ledge.  I'm not afraid of heights but this climb freaked me out.  there are itty bitty steps that were slick on my shoes so you have to hold onto chains and mucho take it easy.

The water is pristine and clear...but turquoise/green/blue.

There was a group of 5 of us that went and we had a great time.  
We were blistered, sun burned, beat, covered in red sand and exhausted by the time we climbed back out of the Grand Canyon but what a trip!
Thanks Geoff for putting it together and Hillary for motivating me to go.

I moved to Midvale last month with my friend AshKash and am really loving it.

I moved again this weekend.
It's further from work, but I'm excited to take trax.

Easter Breakfast

My family spent the weekend at a cabin up in St. Anthony, Idaho for Easter. We had a terrific time and everybody was there. My family is never ALL together for one reason or another, you know how it goes. But this time we were all there..we weren't missing a single person. However, my sister Jen is having a baby next month so our family pictures never stay up-to-date for long. Each family unit was in charge of providing a meal. My single sisters and I made Easter Breakfast and it was so fun.

Here's a slow cooker recipe that I loved and a demo of our new favorite treat that Cody dubbed 'Cinnamon Waffle Bites'. I hope you all had a Happy Easter!

Slow Cooker Sausage Breakfast Casserole

1 pkg. (26 ounces) frozen shredding hash brown potatoes

  • 1 pkg. Jimmy Dean® Hearty Original Sausage Crumbles
    1 cup (4 ounces) shredding mozzarella cheese
    1/2 cup (2 ounces) shredding cheddar cheese
    1 large onion, diced
    1 large green pepper, diced
    12 eggs
    1/2 cups milk
    1 teaspoon salt
    1/4 ground black pepper

Directions

1. Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker.

2. Top with half of the sausage, mozzarella and cheddar cheese, green pepper and onion. Repeat layering.

3. Beat eggs, milk and pepper in large bowl with a wire whisk until well blended.

4. Pour evenly over potato-sausage mixture.

5. Cook on low setting for 6-8 hours or on high setting for 3-4 hours or until eggs are set.

Yield: 12 servings (about 1 cup each)
